Everyone likes wildly different versions of this dish. Tailor the broccoli cooking method and sauce thickness/potency to your own tastes.

Ingredients

Main

  • 1 lb flank steak, sirloin, or tenderloin, thinly sliced against the grain

  • 12 oz broccoli florets

  • 8 oz sliced mushrooms

  • 2 green onions, thinly sliced (for garnish)

  • 1 tbsp sesame seeds

  • 1 cup cooked white rice (Fiber Gourmet Riced Pasta or cauliflower rice if you want to shave off cals)

Beef Marinade

  • 1 ½ tbsp low-sodium soy sauce

  • 1 tsp cornstarch

  • ½ tsp baking soda (tenderizes)

  • 1 tsp sesame oil

  • ½ tsp black pepper

  • Marinate at least 15 minutes (ideal 30–45 minutes chilled)

Sauce

Cooking Oil

  • 1 tbsp avocado or canola oil

Steps

1. Marinate the Beef
Toss sliced beef with soy sauce, cornstarch, baking soda, sesame oil, and black pepper.
Let rest 15 minutes minimum, 30–45 minutes ideal for best tenderness and surface gloss.

2. Sear the Beef
Heat oil in a large skillet or wok over medium-high heat.
Add beef in a single layer; sear 1–2 minutes per side until browned but not fully cooked through.
Remove to a plate and set aside.

3. Cook the Vegetables (Same Pan)
Add a splash of water (~2 tbsp) to the hot pan with the browned bits still there.
Add broccoli and cover for 2 minutes to steam lightly.
Uncover, add mushrooms, and pan-fry another 3–4 minutes until the broccoli edges char slightly and mushrooms reduce.

4. Build the Sauce
Push vegetables to one side; add garlic and ginger to the open space. Cook 30 seconds.
Pour in all sauce ingredients (including cornstarch slurry).
Stir until the mixture thickens and turns glossy, ~1 minute.

5. Combine and Finish
Return beef to the pan. Toss everything together until coated and simmer 1–2 minutes until beef is just cooked through and broccoli tender-crisp.
Adjust salt or sweetness to taste. Add a touch more dark soy for color if desired.

6. Plate and Serve
Scoop ¼ cup rice into each bowl and surround with beef and broccoli mixture.
Top with sesame seeds and sliced green onion.
